Chemistry of Ginger

Every aromatic molecule is made of carbon atoms joined by chemical bonds. In the case of Ginger, zingiberene is the predominant compound. This sesquiterpene is primarily responsible for Ginger’s distinctly spicy aroma and flavor.


Another main constituent found within Ginger is sesquiphellandrene. As its name suggests, this compound also has 15 carbon molecules and is therefore a sesquiterpene. Scientists have studied this compound and discovered through in vitro research that it may help support healthy immune and respiratory function. While more research is required, internal use of an oil containing this compound might lend support to these body systems3.*
