2 cups chickpeas or garbanzo beans (rinsed and drained form can or soaked and cooked dried chickpeas)
½ cucumber, skin on
1 large garlic clove
2 tablespoons lemon juice
2 tablespoons tahini
1 teaspoon salt
¼ teaspoon cracked black pepper
2 tablespoons extra virgin olive oil
2 drops Dill oil
Dill sprigs, for garnish
- Put all ingredients in a food processor and pulse until smooth, scraping down the sides if needed.
- Taste hummus, and add more salt, garlic, tahini, olive oil, or lemon juice until you get desired flavor.
- Scoop hummus into a bowl and drizzle with olive oil. Garnish with dill spring.
Tip: Serve with crackers, vegetables, or spread on bread.
