Overnight oats are a fantastic option for a healthy, nutritious and delicious breakfast. This recipe for blueberry and peanut butter overnight oats is perfect for any day of the week, whether you’re at home or on the go.
Tip: Use Lemon essential oil to balance the sweetness of the blueberries and bring a citrus twist to this recipe.
Ingredients
150 grams fat-free Greek yogurt
150 ml unsweetened almond milk
1 tablespoon chia seeds
1-2 drops of Lemon essential oil
1 cup rolled oats
1/2 cup fresh blueberries
1 tablespoon of sugar-free blueberry jam - per jar
1 tablespoon peanut butter (or preferred nut butter) – per jar
Extra blueberries to serve
Instructions
- In a medium bowl, add the yogurt and almond milk. Mix until you get a creamy consistency. Stir in the chia seeds, oats, Lemon essential oil and blueberries. Combine until you have an even mixture. Cover the bowl and store it in the fridge for at least four hours or overnight.
- Grab your mason jars. Fill half of each jar with the overnight oat mixture, then add a tablespoon of blueberry jam and a tablespoon of peanut butter to each jar. Top with more oat mix. Put the lid on the jars and place the jars in the fridge for later.
- Top with a few extra blueberries before serving.
Extra tip: For a warming, spicy twist, use a toothpick swirl of Cinnamon Bark essential oil!
