Kale Apple Salad Recipe with Essential Oils


Kale is a power-house green. It’s full of nutrients like vitamins A, K, and C, and if it’s made right it can be incredibly delicious! Throwing it into a salad is an easy way to boost the nutritional value of any side dish—just top if with the right dressing, and it’ll be irresistible. This kale salad recipe uses Lemon essential oil and Marjoram essential oil to create a light and flavorful vinaigrette that combines perfectly with the sweet and crunchy additions of sliced apples, dates, and almonds. Aside from tasting good and including awesome ingredients, you can throw it together in minutes—a huge plus in our book.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 bunch kale
  • 1 Honeycrisp apple, sliced into thin matchsticks
  • ¼ cup dates, roughly chopped
  • ¼ cup toasted, slivered almonds
  • ¼ cup Pecorino cheese, finely grated
  • 4 drops Lemon essential oil
  • 1 drop Marjoram essential oil
  • Freshly ground black pepper and kosher salt to taste

Instructions

  1. Prepare the kale by removing the ribs from the leaves and slicing the leaves into thin ribbons. Toss the kale into a large bowl, drizzle with a small amount of olive oil, and massage with your hands until the leaves are soft.
  2. In a separate bowl, add the Lemon essential oil, Marjoram essential oil, olive oil, and salt and pepper. Whisk until emulsified for a light, flavorful vinaigrette.
  3. Pour the vinaigrette over the kale and toss to coat. Set aside.
  4. Add the apples, dates, almonds, and cheese to the kale.
  5. Season with additional salt and pepper to taste, and toss well before enjoying.

When you take your first bite of this recipe, the lemon-marjoram vinaigrette and crunchy sweet apples will serenade your taste buds. Depending on your personal tastes, you can try experimenting with other ingredients like craisins, sunflower seeds, or other fresh fruits like pear to customize your salad.
