Blueberry Lemon Muffins with Lemon Essential Oil

There are way better ingredient options that still give you a warm, scrumptious baked good!
 

Take this blueberry muffin recipe with Lemon essential oil—it’s bright, delicious, and satisfying, here to save the day whenever you’re craving something straight from the bakery! This is a gluten free muffin recipe using no refined sugar, and the results are amazing. Lemon oil delivers that zesty citrus flavor that pairs oh-so well with tart blueberries, taking this already this melt-in-your-mouth muffin recipe to the next level of flavor.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon xanthan gum
  • ½ cup honey or brown rice syrup
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 cup milk
  • ½ cup butter, melted
  • 1 cup fresh or frozen blueberries
  • 8 drops Lemon essential oil

Instructions

  1. In a medium bowl, add the egg, milk, melted butter, brown rice syrup, and Lemon oil and mix together until well combined.
  2. Add the gluten-free flour, xanthan gum, baking powder, and salt to the wet mixture and mix until a smooth batter has formed. Then fold in the frozen blueberries.
  3. Next, spoon the batter into lined or well-oiled muffin tins, filling each one about two-thirds of the way.
  4. Place muffin tins in a preheated oven at 190° C and bake for about 20 minutes, or until a toothpick comes out clean.
  5. Allow to cool slightly before enjoying!
