Raspberry Lemon Yoghurt Icy-Poles


Nothing tastes better on a hot summer day than fresh-from-the-freezer icy-pole. These refreshing yet decadent and creamy treats are easy to make and make the perfect summer treat.

 

Ingredients:
1 cup fresh raspberries 
2 tablespoons honey
2 cups vanilla greek yoghurt 
2 drops of Lemon essential oil


Instructions:

  1. Put raspberries and honey into a food processor and blend until smooth.
  2. Pour into a large bowl.
  3. Add yoghurt and Lemon essential oil to processor and combine. Once combined add raspberries and blend.
  4. Pour the mixture evenly between 6 icy pole molds.
  5. Freeze for 2 hours before putting wooden icy pole sticks in the centres. Freeze for a further 4 hours or overnight.
